Looks and Tastes the Same. Same Nutrition?

Plant-based alternatives can recreate the melt of cheese, the bite of meat and the creaminess of yogurt. But matching the eating experience doesn’t guarantee matching nutrition.

Food technology has become remarkably good at making plant-based alternatives look, taste and behave like the foods they replace.

Plant-based alternatives can recreate the melt of cheese, the bite of meat and the creaminess of yogurt.

But there’s another question:

Did the nutrition come along too?

Sometimes yes.

Sometimes no.

And you can’t tell from taste and texture alone.

The Irony of Vegan Cheese

Cheese is a complicated food to imitate.

Its fat, protein and other components give it its characteristic richness, creaminess, stretch and melt. Recreating those qualities without dairy takes some clever food science.

Many vegan cheeses rely heavily on coconut oil, which is high in saturated fat, and starches to recreate the richness, mouthfeel and texture of dairy cheese.

But recreating the experience of cheese doesn’t automatically recreate its nutrition.

Dairy cheese provides protein and calcium, along with substantial saturated fat and sodium.

Some vegan cheeses provide little protein or calcium while still being high in saturated fat and sodium.

If your goal is simply to avoid animal products, vegan cheese accomplishes that.

But if you’re replacing dairy cheese for better nutrition, you can lose much of the protein and calcium while keeping the saturated fat and sodium you were trying to limit.

Other vegan cheeses use ingredients such as soy, nuts or legumes, and some add protein or calcium. Their nutrition can look very different.

Vegan Yogurt: Same Creaminess, Maybe Not the Same Nutrition

Plant-based yogurts can look and taste remarkably similar to dairy yogurt. Their nutrition varies enormously.

Coconut-based versions can have very little protein, while soy-based or protein-fortified versions can provide considerably more.

Calcium also varies. Dairy yogurt naturally contains calcium. Plant-based yogurts need added calcium to provide amounts comparable to dairy yogurt, and not all are fortified. Check the label if calcium matters to you.

And compare like with like.

Greek yogurt generally provides considerably more protein than regular yogurt. If you’re replacing Greek yogurt, look for a plant-based yogurt with comparable protein and calcium.

Plant-Based Meat: Protein Can Match, but Check the Rest

Many plant-based meats made with soy, pea protein, wheat gluten or other concentrated plant proteins provide protein comparable to meat. They also contain no cholesterol, and some have less saturated fat.

Plant-based meats can be higher in sodium than plain, unseasoned meat, and some are high in total fat.

There’s also one difference that’s easy to overlook: carbohydrate.

Plain meat has essentially no carbohydrate. Some plant-based meats do—even when they provide similar amounts of protein.

This won’t matter to most people. But if you count carbohydrates, don’t assume a plant-based meat has none just because the meat it replaces does.

Same Experience. What About the Nutrition?

A food can successfully replace the taste, texture and cooking function of another food without matching its nutrition.

The replacement doesn’t have to be nutritionally identical. Just know which nutrients matter to you and check whether the replacement provides them.

Looks and tastes the same doesn’t mean the nutrition is the same.


For the Curious: Why Eating More Plants Is Good Advice

Whole and minimally processed plant foods have some distinctive nutritional advantages.

Fiber: Plant foods are our main natural source of dietary fiber. Fiber supports bowel health, can help lower LDL cholesterol, helps with blood sugar control, and feeds beneficial microorganisms living in our guts.

Good fats: Nuts, seeds, avocados and many plant oils are rich in unsaturated fats. Replacing saturated fat with unsaturated fat lowers LDL cholesterol and cardiovascular risk.

Plant sterols, not cholesterol: These compounds reduce cholesterol absorption in the intestine. In sufficient amounts, they can help lower LDL cholesterol.

Thousands of phytochemicals: Plants contain thousands of these compounds, many of which are being studied for their roles in human health.

That’s part of why “eat more plants” is good advice.
