One chicken. I open the package and move the chicken directly into the pot. I\u2019ll talk about the clearer-broth version separately.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">The Secret Is the Simmer<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">You\u2019re looking for an occasional lazy bubble, not a rolling boil.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">That gentle simmer is the whole trick.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Low, moist heat is forgiving. The cooling part deserves a little attention too. I\u2019ll share my lazy cooling method in a separate kitchen tip.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Time to Take Out the Chicken<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Don\u2019t stress about keeping the chicken whole.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">After a long gentle simmer, it will fall apart.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Good.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">That means you have extracted a lot of collagen goodness from the bones and connective tissue.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">We\u2019re taking the chicken apart anyway.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Once it is cool enough to handle, remove the skin and bones.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">For one person, that meat can easily become several different meals throughout the week.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">This chicken is much juicier than canned chicken. It can step in anywhere you see a recipe calling for cooked chicken, shredded chicken, rotisserie chicken, or canned chicken.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Use what fits your budget, your store, and your life.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Strain the Broth<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">While the chicken cools, skim off any excess fat if you like, then strain the broth.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">That\u2019s it.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Skim the fat if you prefer.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Leave it if you prefer.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">This is your broth.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">A good broth may start to thicken as it cools, and after time in the refrigerator, mine often turns into a firm gel. Warm it up, and it melts right back into a rich, silky broth.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Now Comes the Fun Part<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">You have cooked chicken.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">You have broth.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Dinner is halfway done before you even decide what dinner is.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Use the Chicken<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Turn the chicken into:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>chicken salad sandwiches<\/li>\n\n\n\n<li>Caesar salad<\/li>\n\n\n\n<li>grain bowls<\/li>\n\n\n\n<li>rice bowls<\/li>\n\n\n\n<li>wraps<\/li>\n\n\n\n<li>pita sandwiches<\/li>\n\n\n\n<li>tacos<\/li>\n\n\n\n<li>burritos<\/li>\n\n\n\n<li>quesadillas<\/li>\n\n\n\n<li>enchiladas<\/li>\n\n\n\n<li>fried rice<\/li>\n\n\n\n<li>stir-fries<\/li>\n\n\n\n<li>pesto pasta<\/li>\n\n\n\n<li>pizza<\/li>\n\n\n\n<li>baked potatoes<\/li>\n\n\n\n<li>chicken noodle soup<\/li>\n\n\n\n<li>chicken and rice soup<\/li>\n\n\n\n<li>congee<\/li>\n\n\n\n<li>curry<\/li>\n\n\n\n<li>casseroles<\/li>\n<\/ul>\n\n\n\n<p class=\"wp-block-paragraph\">This is not about eating the same chicken meal five days in a row.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">It is about building an ingredient that can become completely different meals.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Let the Broth Do the Heavy Lifting<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">The broth might be my favorite part.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Use it to cook rice instead of water.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Use it to cook noodles.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Use it for soup.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Use it to cook beans or grains.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Cooking rice, noodles, beans, or grains in broth is one of the easiest ways to turn simple staples into something that tastes restaurant-level.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">It feels fancy, but the work already happened while the chicken was simmering.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">One of my easiest emergency meals is:<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">canned beans + vegetables + homemade broth<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">The vegetables can be frozen, pre-cut, fresh, whatever you have.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Dinner is ready in about the time it takes to boil water.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Guest-worthy comfort food, without giving up your own comfort to make it.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">No one needs to know it was this simple.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">One of my favorite ways to use this broth is Bordatino alla Pisana, a hearty Tuscan soup we first tasted in Pisa. That story deserves its own little corner \u2014 coming soon.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">What About Rotisserie Chicken?<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Rotisserie chicken is a great shortcut.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">If it helps you get dinner on the table, use it.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">This whole-chicken method is simply another option for the days when you are home anyway and want the bonus broth.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Rotisserie chicken gives you cooked chicken.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">This gives you cooked chicken and broth.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Different tools.
