They\u2019re packed with fiber, protein, affordable, and incredibly versatile.<\/p>\n<p><\/p>\n<p class=\"wp-block-paragraph\">Yet for many of us, beans still feel like something we <em>should<\/em> eat rather than something we genuinely look forward to.<\/p>\n<p><\/p>\n<p class=\"wp-block-paragraph\">They have an image problem.<\/p>\n<p><\/p>\n<p class=\"wp-block-paragraph\">Maybe you picture the same baked beans, another pot of chili, or something that\u2019s mostly for vegetarians or people trying to stretch a tight grocery budget.<\/p>\n<p><\/p>\n<p class=\"wp-block-paragraph\">There\u2019s nothing wrong with those dishes. A really good chili or homemade baked beans can be absolutely delicious. But they also take time, and after a few meals, most of us are ready for something different.<\/p>\n<p><\/p>\n<p class=\"wp-block-paragraph\">The problem isn\u2019t that beans are boring.<\/p>\n<p><\/p>\n<p class=\"wp-block-paragraph\">It\u2019s that we\u2019ve expected them to be.<\/p>\n<p><\/p>\n<p class=\"wp-block-paragraph\">We pigeonhole beans as plain, practical food and lose interest before giving them a fair chance.<\/p>\n<p><\/p>\n<p class=\"wp-block-paragraph\">If someone had told me years ago that I\u2019d be excited about a can of beans, I probably would\u2019ve laughed.<\/p>\n<p><\/p>\n<p class=\"wp-block-paragraph\">Then I discovered what a simple marinade could do.<\/p>\n<p><\/p>\n<p class=\"wp-block-paragraph\"><strong>A Pleasant Surprise<\/strong><\/p>\n<p><\/p>\n<p class=\"wp-block-paragraph\">Yesterday we made a creamy roasted garlic and sun-dried tomato dressing.<\/p>\n<p><\/p>\n<p class=\"wp-block-paragraph\">One of my favorite ways to use it is to marinate beans.<\/p>\n<p><\/p>\n<p class=\"wp-block-paragraph\">If you already have that dressing in your refrigerator, you\u2019re only a few minutes away from a delicious jar of marinated beans.<\/p>\n<p><\/p>\n<p class=\"wp-block-paragraph\">But even if you skipped yesterday\u2019s recipe\u2014or simply don\u2019t feel like making a dressing\u2014a splash of balsamic vinegar is enough to get you started.<\/p>\n<p><\/p>\n<p class=\"wp-block-paragraph\">That\u2019s it.<\/p>\n<p><\/p>\n<p class=\"wp-block-paragraph\">Add a pinch of salt and pepper if you\u2019d like. The sweet and tangy vinegar alone turns plain beans into something surprisingly satisfying.<\/p>\n<p><\/p>\n<p class=\"wp-block-paragraph\">From there, the possibilities only get better.<\/p>\n<p><\/p>\n<p class=\"wp-block-paragraph\">Roasted garlic.<\/p>\n<p><\/p>\n<p class=\"wp-block-paragraph\">Sun-dried tomatoes.<\/p>\n<p><\/p>\n<p class=\"wp-block-paragraph\">Olives.<\/p>\n<p><\/p>\n<p class=\"wp-block-paragraph\">Fresh herbs.<\/p>\n<p><\/p>\n<p class=\"wp-block-paragraph\">A drizzle of good olive oil.<\/p>\n<p><\/p>\n<p class=\"wp-block-paragraph\">The first bite catches you off guard.<\/p>\n<p><\/p>\n<p class=\"wp-block-paragraph\">Creamy beans.<\/p>\n<p><\/p>\n<p class=\"wp-block-paragraph\">Sweet roasted garlic.<\/p>\n<p><\/p>\n<p class=\"wp-block-paragraph\">Bright herbs.<\/p>\n<p><\/p>\n<p class=\"wp-block-paragraph\">Tangy balsamic.<\/p>\n<p><\/p>\n<p class=\"wp-block-paragraph\">Instead of tasting like beans with dressing poured over them, every bite is infused with flavor.<\/p>\n<p><\/p>\n<p class=\"wp-block-paragraph\">Somehow, a humble can of beans tastes far more vibrant than you\u2019d expect.<\/p>\n<p><\/p>\n<p class=\"wp-block-paragraph\">That\u2019s the moment beans stop feeling like the healthy food you <em>should<\/em> eat and become something you genuinely want to eat.<\/p>\n<p><\/p>\n<p class=\"wp-block-paragraph\"><strong>Why It Works<\/strong><\/p>\n<p><\/p>\n<p class=\"wp-block-paragraph\">As the beans rest in the refrigerator, they slowly absorb the flavors around them.<\/p>\n<p><\/p>\n<p class=\"wp-block-paragraph\">The best part?<\/p>\n<p><\/p>\n<p class=\"wp-block-paragraph\">They taste even better the next day.<\/p>\n<p><\/p>\n<p class=\"wp-block-paragraph\">Instead of wondering how to eat more beans, you start wondering what else you can add them to.<\/p>\n<p><\/p>\n<p class=\"wp-block-paragraph\">A salad.<\/p>\n<p><\/p>\n<p class=\"wp-block-paragraph\">Roasted vegetables.<\/p>\n<p><\/p>\n<p class=\"wp-block-paragraph\">A grain bowl.<\/p>\n<p><\/p>\n<p class=\"wp-block-paragraph\">A wrap.<\/p>\n<p><\/p>\n<p class=\"wp-block-paragraph\">Pasta.<\/p>\n<p><\/p>\n<p class=\"wp-block-paragraph\">Or simply a bowl of marinated beans with some crusty bread.<\/p>\n<p><\/p>\n<p class=\"wp-block-paragraph\">One simple jar quietly makes everyday meals more delicious.<\/p>\n<p><\/p>\n<p class=\"wp-block-paragraph\"><strong>Variety Without Starting Over<\/strong><\/p>\n<p><\/p>\n<p class=\"wp-block-paragraph\">If gas has kept you from eating more beans, dried beans have one advantage over canned. Soaking them overnight and discarding the soaking water removes some of the short-chain carbohydrates that can contribute to gas. Cooking your own beans also lets you control the texture if you prefer beans with a little more bite.<\/p>\n<p><\/p>\n<p class=\"wp-block-paragraph\">The downside? Cooking a pot of beans can feel like a commitment. For many people, the thought of eating the same pot of beans for several days is enough to take dried beans off the menu altogether.<\/p>\n<p><\/p>\n<p class=\"wp-block-paragraph\">Marinating solves that problem.<\/p>\n<p><\/p>\n<p class=\"wp-block-paragraph\">The beans stay the same.<\/p>\n<p><\/p>\n<p class=\"wp-block-paragraph\">The flavors don\u2019t have to.<\/p>\n<p><\/p>\n<p class=\"wp-block-paragraph\">One week they might be bright with lemon and herbs.<\/p>\n<p><\/p>\n<p class=\"wp-block-paragraph\">The next, smoky with paprika.<\/p>\n<p><\/p>\n<p class=\"wp-block-paragraph\">Another week, rich with roasted garlic and balsamic.<\/p>\n<p><\/p>\n<p class=\"wp-block-paragraph\">Canned beans are convenient, affordable, and a great place to start. If you enjoy cooking dried beans, they\u2019re a wonderful option too.<\/p>\n<p><\/p>\n<p class=\"wp-block-paragraph\"><strong>More Than Everyday Lunch<\/strong><\/p>\n<p><\/p>\n<p class=\"wp-block-paragraph\">Marinated beans also happen to make a great last-minute potluck dish.<\/p>\n<p><\/p>\n<p class=\"wp-block-paragraph\">No extra trip to the grocery store.<\/p>\n<p><\/p>\n<p class=\"wp-block-paragraph\">Spend less than 10 minutes mixing everything together tonight, then let the refrigerator do the rest.<\/p>\n<p><\/p>\n<p class=\"wp-block-paragraph\">Want to make them even more special?
