It&#8217;s also about making home cooking easy enough that you&#8217;ll actually do it after a long day.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">That&#8217;s what the <strong>Lower the Bar<\/strong> series is all about. In each article, we&#8217;ll tackle one small obstacle that quietly makes cooking feel harder than it needs to be.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Today, I&#8217;m sharing one simple trick that makes cooking a little less chaotic every time.<\/p>\n\n\n\n<hr class=\"wp-block-separator has-alpha-channel-opacity\"\/>\n\n\n\n<h1 class=\"wp-block-heading\">Why I Use Three Cutting Boards<\/h1>\n\n\n\n<p class=\"wp-block-paragraph\">It&#8217;s not because I&#8217;m obsessed with organization.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">It&#8217;s because I don&#8217;t enjoy stopping in the middle of cooking.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">I keep separate boards for:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Foods I&#8217;ll eat without cooking, like fruit, bread, cheese, or sandwiches<\/li>\n\n\n\n<li>Vegetables<\/li>\n\n\n\n<li>Raw meat<\/li>\n<\/ul>\n\n\n\n<p class=\"wp-block-paragraph\">Instead of interrupting my workflow to wash and sanitize a cutting board halfway through meal prep, I simply grab the next board and keep cooking.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">It sounds like a small change.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">But sometimes it&#8217;s the small interruptions\u2014not the cooking itself\u2014that make cooking feel like work.<\/p>\n\n\n\n<hr class=\"wp-block-separator has-alpha-channel-opacity\"\/>\n\n\n\n<h1 class=\"wp-block-heading\">One Cutting Board Can Be Enough<\/h1>\n\n\n\n<p class=\"wp-block-paragraph\">Don&#8217;t feel like you need to buy more equipment.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">One cutting board can work perfectly well if you prep your food in a thoughtful order.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Start with foods that are least likely to contaminate other foods, then work your way toward those with higher food safety risks.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">A practical order might look like this:<\/p>\n\n\n\n<ol class=\"wp-block-list\">\n<li>Ready-to-eat foods, such as fruit, bread, or cheese<\/li>\n\n\n\n<li>Vegetables<\/li>\n\n\n\n<li>Whole cuts of beef, pork, or seafood<\/li>\n\n\n\n<li>Ground meats<\/li>\n\n\n\n<li>Raw poultry<\/li>\n<\/ol>\n\n\n\n<p class=\"wp-block-paragraph\">Once you&#8217;ve finished cutting raw poultry, wash and sanitize the cutting board before using it again.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">With a little planning, one cutting board is all many home cooks need.<\/p>\n\n\n\n<hr class=\"wp-block-separator has-alpha-channel-opacity\"\/>\n\n\n\n<h1 class=\"wp-block-heading\">My Favorite Upgrade<\/h1>\n\n\n\n<p class=\"wp-block-paragraph\">I still prefer having separate prep surfaces.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">The problem?<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Three full-size cutting boards take up valuable cabinet space, clutter the counter, and fill the dishwasher.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Instead, I keep one sturdy wood or plastic cutting board on the counter and place a thin, flexible cutting mat on top.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">When I switch from vegetables to meat, I simply replace the mat.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">I get the convenience of three cutting boards without storing three bulky boards.<\/p>\n\n\n\n<hr class=\"wp-block-separator has-alpha-channel-opacity\"\/>\n\n\n\n<h1 class=\"wp-block-heading\">Why This Setup Works for Me<\/h1>\n\n\n\n<h2 class=\"wp-block-heading\">Less interruption<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">I don&#8217;t have to stop halfway through cooking to wash a cutting board before moving on to the next ingredient.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Helps my knives stay sharp longer<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Every time your knife hits the cutting surface, the blade loses a tiny bit of its edge.
